The fragrance of tea in China is particularly diverse and precious. Tea connoisseurs read the fragrances of Chinese teas in a similar way to wine connoisseurs in the western world, and fine Chinese teas can be expensive, like expensive wine. One of the more expensive teas is "oolong" tea. The English spelling "Oolong" imitates the sound of the Chinese word "Wulóng" and the word means "black dragon". According to legend, a tea farmer was chased away by a dragon and found a delicious tasting tea when he returned. However, it could also be the elongated shape of the rolled tea leaves, whose resemblance to a dragon gave the tea its name. Wulóng Chá is a special tea (Chá) whose properties lie between those of green and black tea. Black tea is oxidised and has a spicy, intense or piquant aroma. Green tea is not oxidised. Japanese green teas such as matcha are fresh and reminiscent of fresh grass. Chinese green teas usually have a fine, flowery flavour. Breaking off the oxidation process produces very special flavours in oolong tea, intense on the one hand and floral on the other. Creating flavours through the production process of oolong tea is an art that was cultivated in the mountains of Fujian many hundreds of years ago. The art of a traditional tea ceremony still reveals the unique flavour of this tea today.
